For the Cookie Mixture

  • 1/4 cup butter Use unsalted butter for best flavor.
  • 1/2 cup milk Any milk can be used, including dairy or non-dairy.
  • 1 cup light brown sugar Pack the brown sugar for accurate measurement.
  • 1 cup peanut butter Use creamy peanut butter for a smoother texture.
  • 1 teaspoon pure vanilla extract For added flavor.
  • 3 cups old-fashioned oats Do not use quick oats.

Preparation

  • In a medium saucepan over low heat, combine the butter, milk, and brown sugar. Stir constantly until the butter melts.
  • Once everything has melted and blended smoothly, increase the heat and bring the mixture to a rapid boil for exactly one minute.
  • Remove the saucepan from heat and stir in the peanut butter and vanilla extract until smooth.
  • Gradually mix in the old-fashioned oats until well incorporated.
  • Drop spoonfuls of the mixture onto wax paper and allow them to cool completely at room temperature until firm.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months. Try adding mix-ins like chocolate chips, dried fruit, or nuts.
