  • 1 cup creamy peanut butter Make sure it's well stirred if using natural peanut butter.
  • 1 cup brown sugar Packed.
  • 1/2 cup granulated sugar
  • 2 large eggs Room temperature for better mixing.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups rolled oats Can be substituted with gluten-free oats.
  • 1/2 cup chocolate chips or raisins Optional add-ins for variety.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar using a hand mixer until creamy and well blended.
  • Add the eggs and vanilla extract to the mixture, blending until fully incorporated.
  • In a separate bowl, mix together the baking soda, salt, and rolled oats. Gradually add this dry mixture to the wet ingredients, stirring until just combined. If using, fold in the chocolate chips or raisins.
  • Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.

Baking

  • Bake for 10-12 minutes or until the edges look set and the tops are slightly golden.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm with a glass of milk, or crumble over ice cream for a sundae. Store in an airtight container for up to a week or freeze for up to three months.
