Ingredients
  

For the cookie dough

  • 1 cup peanut butter Room temperature for easier mixing.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda Helps the cookies rise.
  • 1/4 teaspoon salt

For the topping

  • 12 pieces Mini Reese's cups Press into the cookies right after baking.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt. Blend until smooth and creamy.
  • Scoop tablespoon-sized portions of dough and roll into balls.

Baking

  • Place the dough balls on a parchment-lined baking sheet, spacing them 2 inches apart.
  • Bake for 8 to 10 minutes, or until edges are lightly golden. Keep an eye on them to ensure they stay soft in the center.
  • Immediately press a Mini Reese’s cup into the center of each cookie after removing from the oven.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Serve warm with cold milk or ice cream. Store in an airtight container for up to a week.
