Peruvian Grilled Chicken with Creamy Green Sauce

Ingredients
  

For the Chicken

  • 2 pounds boneless, skinless chicken thighs
  • 5 cloves garlic, peeled
  • 1/3 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Black pepper, to taste

For the Creamy Green Sauce

  • 3 jalapeños, seeded and chopped
  • 1 cup fresh cilantro leaves
  • 2 green onions chopped (green parts only)
  • 2 cloves garlic, peeled
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil

Instructions
 

Preparation

  • In a blender, combine the peeled garlic, soy sauce, lime juice, extra virgin olive oil, cumin, paprika, oregano, and black pepper. Blend until smooth.
  • Pour the marinade over the chicken thighs in a ziplock bag and seal. Allow to marinate in the refrigerator for 8 to 24 hours.
  • Prepare the creamy green sauce by blending jalapeños, cilantro, green onions, garlic, mayonnaise, Greek yogurt, lime juice, salt, and black pepper until smooth. Slowly add extra virgin olive oil while blending.
  • Transfer the sauce to a bowl, cover, and chill.

Cooking

  • Preheat the grill to medium-high heat (about 350°F).
  • Remove the chicken from the marinade and grill for 5-6 minutes on each side until the internal temperature reaches 165°F.
  • Alternatively, preheat the oven to 500°F. Arrange the marinated chicken in a roasting pan with 1 cup of water and bake for 30 minutes uncovered, then cover with foil and bake for an additional 15 minutes.

Serving

  • Slice the chicken into portions and serve on a platter with the creamy green sauce on the side.
  • Garnish with fresh cilantro or chopped green onions and serve with fluffy rice, roasted potatoes, or a vibrant salad.

Notes

Marinate the chicken longer for better flavor results. Adjust jalapeño for preferred spice level. Store leftovers in an airtight container.
