  • 8 oz almond paste Use high-quality almond paste without added fillers.
  • 1 cup powdered sugar
  • 2 large egg whites Dampen hands slightly to prevent sticking when rolling.
  • 1 teaspoon almond extract
  • 1 pinch salt

For Coating

  • 1 cup pine nuts Ensure they are well-coated.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Break up the almond paste into small pieces in a mixing bowl.
  • Add the powdered sugar and salt to the almond paste, mixing until smooth.
  • Incorporate the egg whites and almond extract, stirring to form a dough.
  • Let the mixture sit for about 10 minutes to develop flavors.

Forming Cookies

  • Scoop small portions of dough (about a tablespoon) and roll them into balls.
  • Roll each dough ball in the pine nuts, ensuring they are well-coated.
  • Place the coated dough balls on the prepared baking sheet, spacing them 2 inches apart.

Baking

  • Bake in the preheated oven for 15-20 minutes until the edges are golden and centers remain soft.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Dust with powdered sugar before serving for extra sweetness. Serve with coffee or tea.
