Ingredients
  

Chicken and Marinade

  • 2 pieces chicken breasts, cubed
  • 2 tablespoons olive oil
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • to taste salt
  • to taste pepper

Vegetables and Fruits

  • 1 cup pineapple chunks
  • 1 piece bell pepper (any color), chopped into pieces
  • 1 piece bell pepper (another color), chopped into pieces
  • as needed skewers (wooden or metal) Soak wooden skewers in water for 30 minutes if using.

Preparation

  • Combine olive oil, soy sauce, minced garlic, grated ginger, salt, and pepper in a bowl to create a smooth marinade.
  • Add the cubed chicken to the marinade, ensuring each piece is thoroughly coated. Let the chicken marinate for at least 30 minutes.
  • Preheat the grill to medium-high heat.
  • Thread the marinated chicken, pineapple chunks, and bell pepper pieces onto the skewers, alternating ingredients.

Grilling

  • Place the assembled kabobs on the grill and cook for about 10-15 minutes, turning occasionally until chicken is cooked and has a nice char.
  • Remove kabobs from the grill and let them cool slightly before serving.

Notes

For best flavor, marinate chicken for 1-2 hours. Serve hot with rice or a fresh salad. You can also add a dipping sauce like sweet chili or yogurt-based sauce.
