  • 1 cup shredded coconut (plus extra for coating) Use unsweetened or sweetened as preferred.
  • 1/2 cup chopped nuts (optional; walnuts or pecans) Omit for nut allergies.

  • Drain the canned pineapple chunks thoroughly and pat dry with paper towels.
  • In a large mixing bowl, combine the softened cream cheese and powdered sugar. Blend until smooth and fluffy.
  • Gently fold in the drained pineapple chunks until evenly incorporated.
  • Scoop out portions of the mixture and roll them into golf ball-sized balls.
  • Roll each ball in shredded coconut until fully coated, then place on a serving platter.
  • Refrigerate for at least one hour to let flavors meld.

Serving

  • Arrange on a festive platter and serve chilled.
  • Optionally, add extra shredded coconut or chopped nuts for customization.

Notes
