For the Pineapple Glaze

  • 1 cup fresh pineapple chunks
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper

For the Salmon

  • 4 pieces salmon fillets Choose high-quality, wild-caught salmon if possible.
  • to taste Chopped green onions for garnish Optional
  • to taste Sesame seeds for garnish Optional

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper for easy cleanup.
  • In a bowl, mix together the fresh pineapple chunks, brown sugar, soy sauce, honey, Dijon mustard, grated ginger, garlic, olive oil, salt, and pepper until combined.
  • Place the salmon fillets in the baking dish, skin-side down if applicable, and pour the pineapple glaze generously over each fillet.

Baking

  • Bake the salmon in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  • Halfway through baking, you can baste the salmon with the glaze to enhance flavor and moisture.

Serving

  • Remove the salmon from the oven and let it rest for a couple of minutes.
  • Garnish with chopped green onions and sesame seeds if desired before serving.

Notes

Serve with rice or quinoa, steamed vegetables, and a slice of lime for added zest. Try different fruits in the glaze or experiment with spices for variations.
