  • 1 cup pineapple chunks Fresh or canned pineapple works.
  • 1/2 cup teriyaki sauce Choose gluten-free if needed.
  • 2 cups cooked rice or noodles Use your preferred base.
  • 1 each bell pepper, sliced Any color you prefer.
  • 1/2 each onion, sliced Yellow or red onion works best.
  • 2 tablespoons olive oil For cooking the chicken.

Preparation

  • Gather all your ingredients. Dice the chicken breast, slice the bell pepper and onion, and prepare the pineapple chunks. Ensure your rice or noodles are cooked.

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced chicken to the skillet and cook until browned and no longer pink, about 5-7 minutes, stirring occasionally.
  • Once the chicken is cooked, add the sliced bell pepper and onion to the skillet and sauté for about 3-4 minutes.
  • Add the pineapple chunks and teriyaki sauce, stirring to coat everything. Cook for an additional 2-3 minutes.
  • Scoop the cooked rice or noodles into bowls and top with the chicken and pineapple mixture.

Garnishing

  • Sprinkle sesame seeds and chopped green onions over the top for garnish.

Notes

Use fresh ingredients for the best flavor. Marinate the chicken for 30 minutes if time allows. Experiment with different vegetables for variety.
