  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup granulated sugar
  • 1 large egg At room temperature.
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt Reduce if using salted butter.
  • 1/2 cup pistachio spread
  • 1 cup chocolate chunks Use any type of chocolate you prefer.
  • 1/2 cup chopped pistachios Optional.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  • Fold in the pistachio spread, chocolate chunks, and chopped pistachios if using.
  • Line a baking sheet with parchment paper.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about two inches apart.

Baking

  • Bake in the preheated oven for 10-12 minutes, until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Enjoy warm for a gooey texture. For variations, consider adding matcha powder, dried cranberries, or lemon zest.
