Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 3-5 minutes using an electric mixer.
  • Add the eggs, one at a time, mixing well after each addition, then incorporate the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Fold in the chocolate chips and the crushed potato chips, ensuring both are evenly distributed throughout the cookie dough.
  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie as they will spread while baking.

Baking

  • Bake for 10-12 minutes, or until the edges start to turn golden. The centers will look slightly undercooked but will set as they cool.
  • Remove the cookies from the oven and let them rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
