  • 12 pieces frozen or homemade potstickers Use store-bought for convenience or homemade for customization.
  • 4 cups low-sodium chicken broth A good-quality broth enhances flavor.

Aromatics

  • 1 tablespoon fresh ginger, grated Fresh ginger adds warmth and flavor.
  • 3 cloves garlic, minced Fresh garlic is preferable for the best aroma.

Vegetables

  • 2 tablespoons low-sodium soy sauce Adjust to taste for desired saltiness.
  • 1 cup sliced carrots Fresh carrots for crunch and color.
  • 2 cups chopped bok choy Add nutrition and texture to the soup.
  • 2 stalks green onions, chopped Save some for garnish.
  • 1 teaspoon sesame oil Adds rich, nutty flavor at the end.

Preparation

  • Heat a large pot over medium heat and pour in the chicken broth.
  • Add the grated ginger and minced garlic to the broth, allowing it to simmer for about five minutes.

Cooking

  • Add the potstickers to the simmering broth and cook for 5 to 7 minutes, or until they float.
  • Stir in the sliced carrots and chopped bok choy, cooking for an additional 3 to 5 minutes until tender.
  • Drizzle in the soy sauce and taste for seasoning, adjusting as necessary.
  • Before serving, stir in the chopped green onions and sesame oil.

Notes

You can customize vegetables and add chili for extra spice. Store leftovers properly and reheat before serving. If freezing, do so without potstickers for best texture.
