  • 1 cup granulated sugar
  • 1/2 cup brown sugar Packed
  • 1/2 cup unsalted butter, softened
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

For the Cream Cheese Frosting

  • 1/2 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract for frosting

Preparation and Baking

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat together the granulated sugar, brown sugar, softened butter, and vegetable oil until smooth and creamy.
  • Add the pumpkin puree, eggs, and vanilla extract to the mixture and continue to mix until combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers look slightly soft.
  • Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Frosting

  • While the cookies cool, prepare the cream cheese frosting by mixing the softened cream cheese and softened butter until smooth.
  • Gradually add the powdered sugar and the vanilla extract, blending until you achieve a creamy consistency.
  • Once the cookies are cooled, frost each cookie generously with the cream cheese frosting.

Notes

For added flavor, consider dusting the cookies lightly with cinnamon or sprinkling finely chopped nuts on top. These cookies can be decorated using cookie cutters for seasonal fun.
