  • 12-15 pieces Wontons (store-bought or handmade) Use store-bought for convenience.

Soup Base

  • 6 cups Vegetable broth Heart of the soup.
  • 2 tablespoons Soy sauce
  • 1 teaspoon Fresh ginger (minced)
  • 2 cloves Garlic (minced)

Vegetables

  • 1 cup Mushrooms (sliced)
  • 2 cups Spinach or other leafy greens
  • 1 cup Additional vegetables (optional, e.g., carrots, peas) Feel free to customize.
  • Green onions (sliced) For garnish.
  • Pepper To taste.
  • 1 teaspoon Sesame oil (optional)

Preparation

  • Bring the vegetable broth to a vigorous boil over medium-high heat.
  • Add soy sauce, minced ginger, and minced garlic to the boiling broth. Stir well.
  • Gently add the wontons to the boiling broth, cooking according to package instructions (about 5-7 minutes).
  • In the final minute, add sliced mushrooms, spinach, and any additional vegetables.
  • Season with freshly ground pepper and drizzle with sesame oil if using.
  • Remove from heat and serve hot, garnished with sliced green onions.

Notes

Store leftovers in an airtight container, keeping wontons separate to prevent them from becoming mushy. Reheat gently.
