  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups old-fashioned rolled oats
  • 1 cup chocolate chips
  • 1 cup chopped nuts (such as walnuts or pecans)
  • 1/2 cup shredded coconut (optional) Can be added for extra flavor

Preparation

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract until fully incorporated.
  • In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Gently fold in the oats, chocolate chips, and nuts. If you like, you can add shredded coconut for an extra layer of flavor.
  • Drop spoonfuls of dough onto the prepared baking sheets, spacing them about two inches apart.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm or chilled. Can be stacked in a decorative jar for gifting or served alongside ice cream for a delicious treat.
