Ingredients
  

For the Cream Cheese Filling

  • 1/4 cup sugar
  • 8 oz cream cheese, softened
  • 1 large egg white from a large egg

For the Cake

  • 1 cup raspberries, washed and well drained
  • 1.5 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 5.5 tablespoons unsalted butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1 large egg yolk from a large egg
  • 3/4 cup sour cream
  • 1 teaspoon vanilla extract

For the Streusel Topping

  • 1/3 cup sugar
  • 1/2 cup all-purpose flour
  • 3 tablespoons butter, chilled and cubed

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  • In a mixing bowl, combine softened cream cheese with 1/4 cup sugar and mix until smooth. Add the egg white and mix on low speed until combined.
  • In another bowl, sift together all-purpose flour, baking powder, baking soda, and salt.
  • Cream together softened butter and 1/2 cup sugar in an electric mixer until light and fluffy, about 2-3 minutes. Add the egg and egg yolk along with vanilla extract and mix until fully blended.

Batter Mixing

  • Gradually add the flour mixture to the creamed mixture, alternating with sour cream. Start and end with the flour mixture. Mix on low speed until just combined, being careful not to overmix.

Assembly

  • Pour the batter into the prepared pan and smooth the top. Spread the cream cheese filling over the cake batter and evenly distribute the raspberries on top.

Streusel Topping

  • In a small bowl, combine sugar, flour, and chilled cubed butter. Cut the butter into the dry ingredients until you achieve pea-sized crumbly pieces, then sprinkle over the raspberries.

Baking

  • Bake for about 40 to 45 minutes, or until a tester inserted in the center comes out clean. Allow to cool on a wire rack, then remove the springform pan.

Notes

For serving, consider dusting with powdered sugar or topping with whipped cream or vanilla ice cream for extra indulgence. Slicing into small squares makes it perfect for gatherings.
