  • 1 tablespoon lemon juice Brightens flavor and balances sweetness.
  • 2 teaspoons gelatin Optional for a firmer mousse.

Preparation

  • In a mixing bowl, combine fresh raspberries, sugar, and lemon juice. Gently mash the raspberries using a fork or potato masher, retaining some chunks for texture.
  • If using gelatin, dissolve it in warm water and let it cool.
  • In a separate bowl, beat heavy whipping cream with an electric mixer on medium speed until soft peaks form.
  • Fold the raspberry mixture into the whipped cream gently, then add vanilla extract.
  • If using gelatin, fold it into the mousse mixture without overmixing.
  • Spoon the mixture into serving dishes and chill in the refrigerator for at least 2 hours.
  • Serve chilled, garnishing with fresh raspberries or whipped cream if desired.

Notes

For best results, use fresh, ripe raspberries. If desired, experiment with added flavors such as chocolate or mint.
