Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Bring to room temperature
  • 1 cup sugar
  • 1 large egg at room temperature
  • 1 tablespoon vanilla extract
  • 1/4 cup buttermilk Can substitute with milk and vinegar

Add-Ins

  • 1 cup white chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  • In another bowl, cream the softened unsalted butter and sugar until light and fluffy.
  • Add the egg and vanilla extract, beating until combined. Then mix in the buttermilk.
  • If using, add red food coloring to reach your desired hue.
  • Gradually stir the dry ingredients into the wet mixture until just combined.
  • Fold in the white chocolate chips.
  • Scoop dough onto a lined baking sheet, spacing them 2 inches apart.

Baking

  • Bake for 10 to 12 minutes until edges look set; centers should be soft.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to one week. For longer storage, refrigerate for up to two weeks or freeze for up to three months.
