Ingredients
  

For the Cookie Bars

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon red food coloring

For the Cream Cheese Frosting

  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla extract for frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In another bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then add vanilla extract and red food coloring.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Spread the batter evenly into the prepared baking pan.

Baking

  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cookie bars to cool completely in the pan.

Frosting

  • In a mixing bowl, beat cream cheese, powdered sugar, softened butter, and vanilla extract until smooth.
  • Once the bars are cool, spread the cream cheese frosting evenly over the top.
  • Optionally, add sprinkles or crushed nuts on top of the frosting before cutting into squares.

Notes

For a unique twist, serve with a scoop of vanilla ice cream. Store in an airtight container for up to three days at room temperature, or refrigerate for up to a week. These bars freeze well for up to three months.
