  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract

Mix-ins

  • 1 cup white chocolate chips or chocolate chips
  • 0.5 cup chopped pecans or walnuts (optional) Optional for additional texture

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder. Set this mixture aside.
  • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, mixing well after each addition. Stir in the red food coloring and vanilla extract, mixing until evenly distributed.
  • Gradually add the dry ingredients to the wet mixture, stirring just until combined to avoid overmixing.
  • Fold in the white chocolate chips and the nuts, if using.

Baking

  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie as they will spread.
  • Bake in the preheated oven for about 10-12 minutes or until the edges are set but the centers are still soft.
  • Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be served plain, drizzled with melted white chocolate, or made into cookie sandwiches with cream cheese frosting.
