  • ½ cup packed brown sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 4 teaspoons red food coloring
  • 2 teaspoons cocoa powder
  • ½ cup granulated sugar or sanding sugar (for rolling)

For the Cream Cheese Filling

  • 4 ounces softened cream cheese
  • 1 large egg yolk
  • ¼ cup granulated sugar
  • teaspoon salt
  • ¼ teaspoon vanilla extract

Instructions
 

Prepare the Dough

  • Cream together the softened butter and brown sugar in a large mixing bowl using a mixer until light and fluffy.
  • Add in the egg yolk and vanilla extract, mixing until fully incorporated.
  • In another bowl, combine the all-purpose flour, red food coloring, cocoa powder, and a pinch of salt.
  • Gradually add the dry mixture to the butter mixture, blending at low speed until well combined.

Shape the Cookies

  • Roll the cookie dough into small balls, about one inch in diameter.
  • Roll each ball in granulated or sanding sugar for a sparkling finish and place them on a parchment-lined baking sheet.

Make the Cream Cheese Filling

  • In a bowl, combine the softened cream cheese, egg yolk, granulated sugar, salt, and vanilla extract.
  • Beat until smooth and creamy, thick enough to hold its shape when piped.

Assemble and Bake

  • Preheat the oven to 350°F (175°C).
  • Create an indentation in the center of each cookie ball with your thumb and fill with cream cheese filling.
  • Bake for about 12-15 minutes or until the edges are slightly golden.

Cool and Serve

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
