Preparation

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper. Mix until it forms a cohesive paste.
  • Rub the garlic and herb mixture all over the chicken, including under the skin.
  • Tuck the wings underneath the chicken for even cooking.

Cooking

  • Place the chicken in the preheated oven and roast for about 1 hour and 20 minutes.
  • Monitor the internal temperature, aiming for 165°F (74°C) in the thickest part of the thigh. Cover loosely with aluminum foil if the skin browns too quickly.

Serving

  • Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  • Serve with lemon wedges and your choice of sides.

Notes

For the best flavor, consider marinating the chicken a few hours in advance. Store leftovers in an airtight container for up to three days in the refrigerator.
