Preparation

  • Melt the unsalted butter in a medium saucepan over medium heat, avoiding browning.
  • Add the minced garlic and sauté for about a minute until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
  • Gradually add in the grated Parmesan cheese, stirring continuously until melted.
  • Fold in the chopped roasted red peppers.
  • Season with salt and pepper to taste.
  • Allow the sauce to simmer for an additional 5 to 7 minutes to thicken.
  • Toss the sauce with your choice of cooked pasta until well-coated.
  • Serve hot, garnished with freshly chopped parsley.

Notes

For added flavor, sprinkle extra Parmesan on top or add crushed red pepper flakes for heat. This sauce pairs well with grilled chicken and sautéed vegetables.
