  • 2 large large sweet potatoes, washed and scrubbed Aim for firm and vibrant sweet potatoes.
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika

For Topping

  • ¾ cup crumbled feta cheese
  • ¼ cup honey
  • 2 tablespoons chopped fresh parsley Or substitute with other fresh herbs like thyme or mint.

Preparation

  • Preheat the oven to 425°F (220°C).
  • Slice the sweet potatoes into ½-inch thick rounds.
  • In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.

Roasting

  • Arrange the seasoned sweet potato slices in a single layer on a lined baking sheet, making sure they are spaced out.
  • Roast in the preheated oven for 25-30 minutes, turning halfway through.
  • Once tender and golden brown, remove from the oven and allow to cool slightly.

Serving

  • Arrange the roasted sweet potato rounds on a serving platter.
  • Sprinkle crumbled feta cheese over the rounds.
  • Drizzle honey over the top and garnish with chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at a low temperature to maintain texture. For variations, consider adding nuts, different cheeses, or spices like cayenne for extra flavor.
