  • 12 rolls Hawaiian rolls
  • 2 cups rotisserie chicken (shredded) Can use pre-shredded chicken for convenience.
  • 12 slices pepper jack cheese
  • 1 cup lettuce (shredded)
  • 1/2 cup pickles (sliced)
  • 1/2 cup spicy mayo
  • 1/4 cup mashed avocado (or guacamole, or sliced avocado) Can substitute with guacamole or sliced avocado.
  • 1 tablespoon butter (softened) For the butter mixture glaze.
  • 1 tablespoon butter (melted) For the butter mixture glaze.
  • 1/2 tablespoon dijon mustard
  • 1/2 teaspoon poppyseeds

Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • Shred the rotisserie chicken by removing meat from the bone and skin.
  • Cut the Hawaiian rolls in half and arrange the bottom halves in a casserole dish.
  • Spread spicy mayo on the bottom halves of the buns.
  • Add half of the pepper jack cheese slices over the mayo.
  • Spread mashed avocado over the cheese.
  • Layer the shredded rotisserie chicken evenly across the sliders.
  • Top with sliced pickles and the remaining pepper jack cheese.
  • Replace the top of the rolls.
  • Mix melted butter with dijon mustard and poppyseeds, then brush over the tops of the rolls.

Baking

  • Cover the dish with foil and bake for 20-25 minutes until cheese is melted.
  • Remove the foil and bake for an additional 3-5 minutes to brown the tops.
  • Serve warm with extra lettuce and spicy mayo on the side.

Notes

For added customization, consider various toppings such as jalapeños, tomatoes, or different cheeses. They can be kept warm in a slow cooker for serve-yourself gatherings.
