For the soup

  • 1 whole rotisserie chicken, shredded Use store-bought for convenience.
  • 8 oz mushrooms, sliced Your choice of mushrooms.
  • 1 large onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth Homemade or store-bought for best flavor.
  • 1 tsp dried thyme
  • to taste salt
  • to taste pepper

Preparation

  • Begin with a large pot on the stove, heating a splash of olive oil over medium heat.
  • Add the diced onion, sliced carrots, chopped celery, and minced garlic to the pot. Cook these ingredients together for about 5 to 7 minutes.
  • Once the vegetables are softened, toss in the sliced mushrooms and sauté for about 3 to 4 minutes until they start to release their juices.
  • Pour in the chicken broth and bring the mixture to a simmer.
  • After the broth reaches a simmer, add the shredded rotisserie chicken and dried thyme. Allow the soup to simmer gently for about 20 minutes.
  • Taste the soup and adjust seasoning with salt and pepper as needed.
  • Ladle the soup into bowls and enjoy it hot.

Notes

Serve with crusty bread or a side salad for a complete meal. For added flavor, sprinkle fresh herbs on top before serving.
