Ingredients
  

For the Pineapple

  • 8 rings pineapple rings Fresh, ripe pineapple yields the best flavor.
  • 1 cup dark rum You can swap with spiced rum for more flavor.
  • 1 cup coconut rum
  • 1.5 cups all-purpose flour Can substitute with coconut flour for gluten-free.
  • 10 oz sweetened coconut flakes
  • 2 large eggs Whisk together with coconut milk.
  • 0.5 cup coconut milk
  • vegetable oil For frying.

For the Dipping Sauce

  • 4 oz cream cheese, softened
  • 0.5 cup powdered sugar

Instructions
 

Soaking the Pineapple

  • Soak your pineapple rings in a mix of dark rum and coconut rum for at least 1 hour.
  • Drain and gently pat dry with a paper towel.

Preparing the Breading Stations

  • Set up three shallow bowls: one with all-purpose flour, one with whisked eggs and coconut milk, and one with sweetened coconut flakes.

Coating the Pineapple

  • Coat each pineapple ring in flour, then dip in the egg mixture, and finally roll in coconut flakes.

Frying the Pineapple

  • Heat vegetable oil to 350°F (175°C) and carefully drop in the coated pineapple rings.
  • Fry for about 1 minute on each side until golden brown.
  • Remove from oil and drain on paper towels.

Preparing the Dipping Sauce

  • Mix softened cream cheese and powdered sugar, adding a splash of reserved rum for flavor.

Notes

Serve fresh for optimal texture. Can keep warm in a low oven if necessary, but will lose some crispiness.
