Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Make sure it's at room temperature
  • 3/4 cup brown sugar Packed
  • 3/4 cup granulated sugar
  • 1 large egg At room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Sifted for a lighter texture
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup caramel bits or soft caramel candies
  • to taste pinch sea salt for sprinkling Add right after baking

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Cream together until smooth and fluffy, about 2-3 minutes.
  • Add the egg and vanilla extract to the mixture and mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, folding gently to avoid overmixing.
  • Fold in the caramel bits until evenly distributed.

Baking

  • Line a baking sheet with parchment paper and drop portions of cookie dough onto the sheet, leaving space between each.
  • Bake for 10-12 minutes until the edges are golden and the centers are slightly soft.
  • Remove from the oven and sprinkle a pinch of sea salt on top of each cookie.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

To avoid tough cookies, do not overmix the dough. Consider chilling the dough for about 30 minutes if it's sticky before baking.
