  • 2 cups diced chicken breast
  • 1 tablespoon ranch seasoning
  • 1 cup shredded mozzarella cheese
  • 1 can biscuit dough or 1 sheet puff pastry Use either based on preferences.
  • 2 tablespoons olive oil For brushing.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the diced chicken breast with ranch seasoning, salt, and pepper.
  • If using biscuit dough, separate the dough into individual biscuits. If using puff pastry, roll it out to about ¼ inch thick and cut into circles, approximately 4 inches in diameter.

Assembly

  • Place a spoonful of the chicken mixture in the center of each dough circle, topping with a small piece of mozzarella cheese.
  • Fold the dough over the filling and pinch the edges to seal them well.

Baking

  • Arrange the sealed bombs on a baking sheet lined with parchment paper. Brush the tops with olive oil.
  • Bake in the preheated oven for about 15-20 minutes until golden brown and the chicken is cooked through.
  • Allow them to cool for a few minutes before serving warm.

Notes

Serve with marinara sauce for dipping or a green salad for balance. For variety, consider BBQ chicken, buffalo chicken, or veggie variations.
