Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  • In a large mixing bowl, combine ground chicken with panko bread crumbs.
  • Add grated Parmesan cheese, milk, eggs, minced garlic, dried Italian seasoning, salt, black pepper, and garlic powder.
  • Gently mix everything together until just combined, avoiding overmixing.
  • Pour in chicken broth and mix gently once more.
  • Transfer mixture to the prepared loaf pan and smooth the top.
  • Drizzle melted butter over the top.

Baking

  • Bake in the preheated oven for 50-60 minutes or until the internal temperature reaches 165°F (75°C).
  • For extra flavor, scatter additional Parmesan cheese on top during the last 10 minutes of baking.

Serving

  • Allow meatloaf to rest for 10 minutes before slicing.
  • Slice into thick pieces and serve with favorite sides such as creamy mashed potatoes or roasted vegetables.
  • Garnish with freshly chopped parsley and serve with extra grated Parmesan on the side.

Notes

Leftovers can be transformed into sandwiches. Consider adding chopped onions or bell peppers for extra flavor.
