  • 400 g Chicken thighs (cut into small pieces)
  • 2 cups Scallion (chopped) Separate white parts from green parts
  • 4 tablespoons Oil For frying
  • 2 tablespoons Soy sauce
  • ½ tablespoon Dark soy sauce
  • ½ tablespoon Oyster sauce
  • ½ teaspoon Black pepper powder Adjust to taste
  • 2 tablespoons Corn starch

Preparation

  • In a medium-sized bowl, combine chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper powder, and corn starch. Mix well to coat the chicken.
  • Let the chicken marinate for about 10 minutes.
  • Chop the scallions finely, separating the white parts from the green parts.

Cooking

  • Heat oil in a non-stick pan over medium heat.
  • Add the marinated chicken pieces in a single layer and pan-fry for 6 to 8 minutes, or until cooked through.
  • Once the chicken is cooked, add the white parts of the scallions and let them simmer for 2 to 3 minutes until softened.
  • Finally, toss in the green parts of the scallions and stir for 10 to 20 seconds.

Serving

  • Serve hot, optionally garnished with extra scallions or black pepper.
  • Pair with steamed rice or noodles.

Notes

For a spicier version, consider adding red pepper flakes during cooking. You can also enhance the flavor with a splash of lemon or lime juice before serving.
