Ingredients
  

Chicken and Seasoning

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tbsp brown sugar
  • 1.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp cayenne pepper
  • 0.5 tsp kosher salt
  • 1 tbsp olive oil
  • 0.5 lemon, sliced

Herby Ranch Slaw

  • 0.5 cup plain yogurt (or non-dairy alternative)
  • 0.25 cup fresh dill, finely chopped
  • 0.25 cup fresh parsley, finely chopped
  • 2 tbsp fresh chives, minced
  • 0.5 tbsp juice from lemon
  • 2 tbsp olive oil
  • to taste kosher salt
  • 0.5 small head green cabbage, shredded

To Assemble

  • 2-3 pitas
  • 1 ripe avocado, cubed

Preparation

  • Preheat your oven to 425ºF. In a large mixing bowl, combine the chicken pieces with brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, kosher salt, and olive oil. Toss well to ensure the chicken is fully coated. Add the lemon slices and mix again.

Roasting the Chicken

  • Spread the seasoned chicken and lemon slices on a sheet pan in a single layer. Roast for about 15 minutes. Toss the chicken for even cooking, then return it to the oven for an additional 4 to 7 minutes or until caramelized and cooked through.

Making the Slaw

  • In another bowl, whisk the plain yogurt, dill, parsley, chives, lemon juice, olive oil, and a pinch of kosher salt until smooth. Fold in the shredded cabbage and let rest for 10 to 15 minutes to meld flavors.

Warming and Filling

  • Warm the pitas in the oven for a few minutes or on a skillet until soft. Assembling the pitas, fill each with a scoop of herby ranch slaw, roasted chicken, and avocado cubes.

Serving

  • Serve the filled pitas warm and enjoy immediately, garnished as desired.

Notes

Marinate the chicken for extra flavor if you have time. Customize herbs in the slaw to your preference. For a lighter option, use skinless chicken thighs or low-fat yogurt.
