  • 1 lb shrimp, peeled and deveined Fresh or thawed frozen shrimp
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning Adjust according to heat preference
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil For sautéing
  • Green onions, for garnish Optional, for serving

Instructions
 

Preparation

  • Heat the vegetable oil in a large skillet over medium heat.
  • Dice the onion, bell pepper, and celery.
  • Once the oil is hot, add the chopped vegetables to the skillet and sauté for about 5 minutes, or until softened and aromatic.
  • Mince the garlic and add it to the skillet along with the Cajun seasoning, stirring for an additional minute.

Cooking

  • Add the peeled and deveined shrimp to the skillet and cook for 3 to 4 minutes, or until they turn pink.
  • Incorporate the long-grain white rice and mix it thoroughly with the shrimp and vegetable mixture.
  • Carefully pour in the chicken broth and sprinkle with salt and black pepper, stirring to combine.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 20 to 25 minutes.
  • After the liquid is absorbed, remove from heat and fluff the rice gently with a fork.
  • Garnish with sliced green onions before serving.

Notes

For added flavor, consider adding a splash of lemon juice before serving. Customize the Cajun seasoning according to your heat preference.
