Vegetables and Spices

  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning Adjust to taste.
  • Salt and pepper to taste

  • 2 tbsp vegetable oil

Preparation

  • Heat the vegetable oil in a large skillet over medium heat.
  • Add the sliced smoked sausage and cook until browned.
  • Incorporate the diced onion, bell pepper, and minced garlic; sauté until softened.
  • Stir in the rice and cook for an additional two minutes.

Cooking

  • Pour in the chicken broth, followed by Cajun seasoning, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat to low and cover the skillet.
  • Let it simmer for about 15 minutes or until the rice is cooked and liquid absorbed.
  • Fold in the shrimp and cook until pink and opaque.
  • Fluff the rice gently with a fork and garnish with green onions before serving.

Notes

For added flavor, consider using diced celery or Worcestershire sauce. Adjust seasoning to taste. Store leftovers in an airtight container for up to three days.
