  • 2 pounds potatoes, diced Russet or Yukon Gold potatoes are recommended.
  • 1 pound andouille sausage, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Use low-sodium if preferred.
  • 1 cup heavy cream Can substitute with half-and-half or a non-dairy alternative.
  • 1 tablespoon Cajun seasoning Adjust according to spice preference.
  • to taste Salt and pepper
  • for garnish Chopped green onions Add just before serving.

Instructions
 

Preparation

  • Dice the potatoes into bite-sized pieces.
  • Chop the onion and mince the garlic.

Cooking

  • Combine all ingredients in the slow cooker: potatoes, sausage, onion, garlic, Cajun seasoning.
  • Pour in the chicken broth to cover all ingredients.
  • Cover the slow cooker and set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • After cooking, check the potatoes for tenderness.
  • Stir in the heavy cream and season with salt and pepper to taste.

Serving

  • Ladle the soup into bowls and garnish with chopped green onions.
  • Serve with crusty bread or crackers.
