Main Ingredients

  • 2 lbs chicken thighs or breasts Thighs are preferred for juiciness.
  • 4 pieces carrots, chopped
  • 3 pieces potatoes, diced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth

Seasoning

  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions
 

Preparation

  • Place the chicken pieces at the bottom of the slow cooker.
  • Scatter the chopped carrots, diced potatoes, onion, and minced garlic on top of the chicken.
  • Pour the chicken broth over the ingredients, ensuring they're covered.
  • Sprinkle the dried thyme, dried rosemary, and season generously with salt and pepper.
  • Gently stir everything together with a large spoon.

Cooking

  • Cover the slow cooker with its lid.
  • Cook on low for 6-8 hours or on high for about 4 hours.
  • Once cooked, shred the chicken directly in the pot if using thighs.

Serving

  • Ladle the hot stew into bowls, including chicken and vegetables.
  • Serve with freshly baked bread or rolls and enjoy.

Notes

Store leftovers in airtight containers for up to three days in the refrigerator or up to three months in the freezer. Reheat gently, adding broth as necessary.
