  • 1 lb ground beef Opt for lean ground beef for a healthier option.
  • 4 medium potatoes, diced Yukon Gold or Russet potatoes work well.
  • 1 medium onion, chopped Yellow or white onion preferred.
  • 3 cloves garlic, minced Fresh garlic adds better flavor than powder.
  • 4 cups beef broth Can substitute with vegetable broth for a vegan version.
  • 1 cup heavy cream Essential for a creamy texture.
  • 1 tsp salt Adjust according to taste.
  • 1 tsp black pepper Freshly ground recommended.
  • 2 tsp dried thyme Can substitute with rosemary or oregano.
  • 1 cup carrots, chopped Fresh or frozen carrots can be used.
  • 1 cup celery, chopped Adds great flavor and crunch.

Instructions
 

Preparation

  • Brown the ground beef in a skillet over medium heat until no longer pink, about 5 to 7 minutes. Drain excess fat.
  • Transfer the browned ground beef to the slow cooker.
  • Add diced potatoes, chopped onion, minced garlic, chopped carrots, and chopped celery to the slow cooker.
  • Pour in the beef broth, ensuring the ingredients are fully submerged.
  • Season with salt, black pepper, and dried thyme. Stir well to combine.

Cooking

  • Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • About 30 minutes before serving, stir in the heavy cream.
  • Taste and adjust seasoning if needed.

Notes

Serve with fresh herbs for garnish and crusty bread on the side. The soup can be customized with various vegetables and can be made vegan by substituting beef with lentils and using vegetable broth.
