  • 1 cup split peas Rinsed and sorted
  • 1 cup diced ham Leftover ham works best
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth Or vegetable broth for a vegan variant
  • 1 teaspoon thyme Fresh thyme can be substituted
  • Salt and pepper to taste

Preparation

  • Rinse and sort the split peas to remove any debris and discolored peas.
  • In the slow cooker, combine the rinsed split peas, diced ham, chopped onion, carrots, and celery.
  • Pour in the chicken broth and stir in the thyme.
  • Season with salt and pepper to taste.

Cooking

  • Cook on low for 6-8 hours or on high for 3-4 hours until peas are tender.
  • Stir the soup as it nears the end of the cooking time.
  • Adjust seasoning before serving.

Serving

  • Ladle the soup into bowls and garnish with chopped fresh parsley if desired.
  • Serve with crusty bread or a side salad.

Notes

For a thicker soup, reduce the amount of broth. Leftovers can be stored in airtight containers for up to 4 days in the refrigerator or up to 3 months in the freezer. Reheat with a splash of water or broth if necessary.
