  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Preparation

  • Preheat your smoker to a steady 225°F (107°C).
  • In a medium-sized bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper to form a thick paste.
  • Rub the spice mixture thoroughly all over the chicken thighs to coat them completely.

Smoking the Chicken

  • Place the seasoned chicken thighs directly on the smoker racks.
  • Close the lid and let the thighs smoke for about 2 hours until they reach an internal temperature of 165°F (74°C).

Resting

  • Once cooked, remove the chicken from the smoker and let it rest for a few minutes before slicing.

Notes

Pair smoked chicken thighs with sides like coleslaw or grilled vegetables. For added flavor, try garnishing with fresh herbs.
