For the Cookies

  • 1 cup unsalted butter, softened At room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs At room temperature
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 cups all-purpose flour Measured correctly
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips

For the Glaze

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until creamy.
  • Add in the eggs, fresh lemon juice, and lemon zest, mixing until fully combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture and mix gently until just combined.
  • Fold in the white chocolate chips.
  • Scoop tablespoon-sized portions of dough onto a lined baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes, until lightly golden around the edges.
  • Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Glazing

  • Mix the powdered sugar with the additional lemon juice until smooth.
  • Drizzle the glaze over the cooled cookies.

Notes

For added texture, consider adding nuts or oats. Glazing is optional but enhances sweetness. Store cookies in an airtight container at room temperature for up to a week.
