Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, and salt. Stir until well mixed.
  • Add melted butter, milk, and vanilla extract to the dry ingredients and mix until just combined.
  • Grease a 9x13 inch baking dish with non-stick cooking spray or butter.
  • Pour the batter evenly into the prepared dish, covering the bottom completely.
  • Arrange sliced bananas evenly on top of the batter.
  • In a small bowl, mix cinnamon and nutmeg, then sprinkle this mixture over the bananas.

Baking

  • Place the baking dish in the preheated oven and bake for about 45-50 minutes.
  • Check for doneness by inserting a toothpick into the center; it should come out clean.
  • Let the cobbler cool slightly before serving.

Notes

Serve warm, with a scoop of vanilla ice cream or whipped cream. Consider dusting with powdered sugar or drizzling caramel sauce for added sweetness. For a crunch, add chopped nuts to the batter.
