Ingredients
  

For the sushi rice

  • 2 cups sushi rice (uncooked) Rinse until water runs clear.
  • 2.5 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar For flavoring the rice.
  • 1 teaspoon salt

For the salmon mix

  • 1 lb fresh salmon fillet (skinless and diced) Use sushi-grade salmon for best results.
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce Adjust to taste.
  • 1 teaspoon sesame oil
  • 1/2 cup green onions (chopped) Plus extra for garnish.

For assembly

  • 1 sheet nori (cut into small strips)
  • to taste Tobiko Optional for garnish.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Rinse the sushi rice under cold water until the water runs clear, then combine it with 2.5 cups of water and cook according to package instructions.
  • In a mixing bowl, combine rice vinegar, sugar, and salt. Stir until dissolved.
  • Once the rice is cooked, gently fluff it and fold in the vinegar mixture. Allow to cool slightly.

Mixing

  • In a bowl, mix the diced salmon with mayonnaise, Sriracha sauce, sesame oil, and chopped green onions until well combined.

Assembly and Baking

  • Spread the sushi rice evenly in the bottom of a baking dish.
  • Gently spread the salmon mixture on top of the rice.
  • Bake for 25-30 minutes until the salmon is cooked through and the top is slightly golden.

Serving

  • Let the dish cool slightly, then garnish with extra green onions, nori strips, and tobiko before serving.

Notes

Use high-quality salmon for best flavor. Adjust Sriracha for desired spice level. You can prepare components in advance to save time.
