  • 1/2 lb. Ground Italian Sausage
  • 1 cup Red Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1/3 cup Tomato Paste
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese (grated)
  • 1-2 tsp Red Pepper Flakes Adjust according to heat preference.
  • 1/2 tsp Salt
  • 1 tbsp Butter
  • 1 tbsp Olive Oil
  • 2 tbsp Fresh Parsley (chopped) For garnish.

Preparation

  • Brown the ground sausage in a large skillet over medium heat until thoroughly cooked.
  • Transfer sausage to a paper towel-lined plate to remove excess grease.
  • Wipe the skillet with a paper towel to remove leftover grease.
  • Bring a pot of salted water to a boil and add the rigatoni, cooking until al dente. Drain and set aside.

Sauce Preparation

  • In the same skillet, heat the butter and olive oil over medium-low heat.
  • Add chopped red onions and cook until softened, about 4-5 minutes.
  • Stir in minced garlic and cook for an additional minute.
  • Incorporate the tomato paste, stirring well, and season with salt and fresh parsley.
  • Slowly whisk in the heavy cream to create a sauce base.
  • Add grated Parmesan cheese and mix until melted.
  • Sprinkle in red pepper flakes according to heat preference.

Combine

  • Return the cooked sausage and drained rigatoni to the skillet.
  • Integrate everything well, ensuring the pasta is fully coated in the sauce.
  • Garnish with additional fresh parsley and Parmesan cheese before serving.

Notes

For best flavor, season generously while cooking. Save a bit of pasta water to adjust sauce consistency if needed. Feel free to use mild or spicy sausage depending on preference.
