  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup pepper jack cheese, shredded

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic. Sauté for 3 to 5 minutes until fragrant and soft.
  • Stir in diced jalapeños, cayenne pepper, and ground cumin. Cook for an additional 2 minutes.
  • Add chicken breasts, rinsed white beans, and chicken broth. Stir to combine and bring to a boil.
  • Reduce heat to simmer and cook for 20 to 25 minutes until chicken is tender.
  • Remove chicken and shred using two forks. Return shredded chicken to the pot.
  • Stir in shredded pepper jack cheese until melted. Season with salt and pepper to taste.
  • Garnish with fresh cilantro before serving.

Notes

Adjust spice level by modifying the number of jalapeños or omitting cayenne pepper. To enhance flavor, consider adding lime juice before serving. This dish is versatile; feel free to add corn or diced tomatoes for added texture.
