Ingredients
  

For the Chicken Rolls

  • 4 pieces boneless, skinless chicken breasts Pound to an even thickness
  • 1 tablespoon olive oil For sautéing
  • 1 piece onion, finely chopped
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach, chopped Can use frozen spinach, thawed and drained
  • 1/2 cup crumbled feta cheese Be generous with the feta for flavor
  • 1/4 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste
  • Toothpicks for securing

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet over medium heat, add olive oil. Once hot, sauté the onion and garlic until softened, about 3-4 minutes.
  • Add chopped spinach and cook until wilted, then remove from heat.
  • Stir in feta cheese and sun-dried tomatoes, seasoning with salt and pepper.

Assembling and Baking

  • Take a chicken breast, place it flat, and spoon a portion of the spinach and feta mixture onto it.
  • Roll the chicken breast around the filling and secure with toothpicks.
  • Place the rolls in a baking dish and bake for 25-30 minutes until the chicken is cooked through.
  • Remove toothpicks before serving.

Notes

Pound the chicken breasts to ensure even cooking. You can add herbs and spices or variations like olives for flavor. Allow rolls to rest after baking for best texture.
