  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a shallow bowl, combine grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  • In another bowl, beat the eggs until fully blended.
  • Coat each chicken breast in the beaten eggs.
  • Press the egg-coated chicken into the Parmesan mixture, ensuring good coverage.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Add the coated chicken breasts and cook for 3-4 minutes on each side, or until golden brown.
  • Transfer the browned chicken to a baking dish and bake for an additional 15-20 minutes.
  • Ensure the internal temperature reaches 165°F (74°C) before serving.

Serving

  • Allow the chicken to rest for a few minutes before serving.
  • Serve with mixed greens, mashed potatoes, or roasted vegetables.

Notes

Pounding the chicken helps it cook evenly. Control the oil temperature to avoid greasy breading. Allow the chicken to rest after baking.
