  • 1 box strawberry cake mix
  • 2 large eggs Make sure they are at room temperature.
  • 1/2 cup vegetable oil Can be replaced with melted butter for added flavor.

Coating

  • 1/2 cup powdered sugar For rolling the cookies.

Optional Add-ins

  • 1/2 cup chocolate chips Can substitute with white chocolate chips.
  • 1/2 cup chopped nuts Such as walnuts or pecans.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil. Stir until the mixture is smooth and fully combined.
  • If you want to add chocolate chips or nuts, fold them into the dough at this point.
  • Use a cookie scoop or a tablespoon to drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  • Roll each ball of dough in powdered sugar to give them a sugary coating.

Baking

  • Bake in the preheated oven for about 10 to 12 minutes, or until the edges are slightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use room-temperature eggs, and don't overmix the dough. Chill the dough for 30 minutes if you prefer thicker cookies. You can enhance flavors with lemon zest or shredded coconut.
