  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • ½ cup fresh strawberries, diced
  • ½ cup powdered sugar (for frosting, optional)

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Beat in the egg and vanilla extract until fully combined.
  • Add the softened cream cheese and beat until smooth.
  • Gradually mix in the dry ingredients until just combined.
  • Gently fold in the diced strawberries.
  • Use a cookie scoop to drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 12-15 minutes or until the edges are lightly golden and the centers are still soft.
  • Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.

Optional Frosting

  • If desired, mix the powdered sugar with enough water or milk to achieve a smooth consistency and drizzle over the cooled cookies.

Notes

For best results, use room temperature ingredients and avoid overmixing the batter. These cookies can be stored at room temperature for up to 4 days in an airtight container or frozen for up to 3 months.
