Ingredients
  

For the Cookie Dough

  • 1 cup sugar
  • 1/2 cup butter, softened Make sure it's at room temperature.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Spoon and level when measuring.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, chopped Use fresh strawberries for the best flavor.

For the Cream Cheese Filling

  • 1 cup cream cheese, softened Ensure it's at room temperature.
  • 1/4 cup powdered sugar

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the sugar and softened butter until smooth and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, mix together flour, baking powder, and salt.
  • Gradually add this dry mixture to the butter mixture and stir until just combined.
  • Fold in the chopped fresh strawberries.

Baking

  • Prepare your baking sheets by lining them with parchment paper.
  • Drop spoonfuls of cookie dough onto the sheets, spacing them 2 inches apart.
  • In another bowl, beat together cream cheese and powdered sugar until smooth.
  • Make an indentation in each cookie dough ball and fill with cream cheese mixture.
  • Bake for 12 to 15 minutes, or until edges are golden brown.
  • Allow cookies to cool on sheets for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a few days. For longer storage, refrigerate or freeze them.
