Cheesecake Filling Ingredients

  • ¼ cup strawberry jam or puree

Prepare the Cheesecake Filling

  • In a small bowl, whisk together softened cream cheese, 2 tablespoons of granulated sugar, and 1 teaspoon of vanilla extract. Add in the strawberry jam or puree and mix until smooth. Cover and refrigerate to firm up.

Make the Cookie Dough

  • In a large mixing bowl, beat together the softened unsalted butter, ½ cup of granulated sugar, and ½ cup of brown sugar until light and fluffy.
  • Add in the large egg and 1 teaspoon of vanilla extract, mixing until well combined.
  • In another bowl, combine the all-purpose flour, baking soda, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until a soft dough forms.
  • Gently fold in the crushed freeze-dried strawberries.

Chill the Dough

  • Cover the dough and refrigerate for about 30 minutes to thicken.

Shape and Bake the Cookies

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop about 1 tablespoon of dough, flatten it, and place ½ teaspoon of the cheesecake filling in the center. Cover with another tablespoon of dough, seal the edges, and roll into a ball.
  • Arrange on the baking sheet and bake for 12 to 15 minutes or until edges are golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For the best results, ensure your butter is softened, and be gentle when folding in strawberries. Avoid overbaking for a chewy texture. You can also experiment with different fruit jams or add chocolate chips for a twist.
